
The original Irish Stew consists of neck of mutton, almost as much potato as meat, and sliced onions arranged in layers and stewed. I make this beef version exactly as it was passed on to me by my mum.

It was excellent! we used butter instead of oil, and added a splash of red wine to the meat. Cooked in Dutch oven, but otherwise followed recipe. Don't forget the bread to dip in the sauce, yummy!
This recipe looks simple but it is delicious! I substituted 1/4c red wine for the tomato paste and marjoram for bay leaf.
Yummy stew and it taste even better the next day. Perfect thick broth and tender meat. Will make again for sure.
